Lemon Blueberry Poppy Seed Loaf
Anything with lemon, blueberry, and poppy seed is on my list; the combination is heavenly! This loaf will pair beautifully with a warm oat milk latte or a steamy London fog with soy milk. It’s such a comforting way to start your day with loved ones. I recommend using oat milk for this recipe as it helps the loaf have that perfect moist – yet fluffy consistency. My favorite oat milk is from Aldi. It has a great flavor (get the original; the unsweetened is very watery) and is the most affordable oat milk I’ve found yet.
Vegan Quiche for Easter Brunch
This beloved classic with a compassionate twist is ready in less than an hour and will have guests raving for weeks to come. If you haven’t mastered vegan crust yet, my favorite brand of pre-made animal-fat-free crust is Jus-Rol. You can find the brand at Meijer in the biscuit section.
Vegan Blueberry Cinnamon Rolls
Did I mention I love blueberry? Oh yes, I did! These soft and buttery blueberry rolls will melt all the vegan-haters’ hearts for sure! Best as a snack in between breakfast and lunch, these heartwarming rolls will have guests grinning like the Easter bunny himself! For the icing, use Tofutti’s ‘Better Than Cream Cheese’ vegan cream cheese. This brand is the only nut-free cheese alternative brand available to us in the Midwest at the moment; available at Jewel and Woodmans. Also, swap for gluten-free flour and nut-free plant milk to ensure everyone can get a bite!
My husband’s grandma hosts Easter each year, and for dessert, she makes the cutest cake shaped like a lamb. Unfortunately, she hasn’t mastered vegan baking yet, but the coconut shavings on the little lamb look so cute I wish I could take a bite! To satisfy your cuteness cravings, try these Easter Bunny cupcakes instead! With the same coconut-shaving fur, this treat is a hop-and-a-half. My favorite brand of vegan marshmallows is Dandies, a local Chicago vegan favorite! Not only are they vegan, but they are also free from corn syrup, artificial colors, and flavors! Supporting local businesses is always a plus in my book!
It’s not Easter without carrot cake! Carrot cake is one of the easiest cakes to ‘veganify’ as the cake itself is packed with vegetables, nuts, and a decadent texture. The recommended frosting for this cake is coconut whipped cream. However, if your loved ones are allergic to nuts, omit them from the cake batter and use this vegan cream cheese frosting recipe instead using the Tofutti whipped cream cheese.
